I'm not sure why I didn't save them for a whole other post, but we can question my planning skills (or lack thereof) later.
Anyway, let me introduce you to the easiest + yummiest dessert in the world:
Mini fruit pizzas.
And guess what? You can basically make these little guys for every single seasonal holiday there is. Just use fruit that color coordinates. Like strawberries for Valentine's day (maybe in a heart shape?) or canned Mandarin oranges for fall. Ya'll are probably more creative than I am...
Personally, I'm a fan of the patriotic variety because of the red, white, and blue summer fruits.
AKA raspberries, bananas (okay, they're kind of yellow, but you get the idea), and blueberries.
As for the base of these sweet pizzas, all you need is a store bought roll of sugar cookies. You can also bake your own, but I was both short on time (it was a last-minute idea) and skill (I've never had good luck with baking sugar cookies for some reason).
All you need to do is follow the directions on the package and bake them accordingly. Personally, I like my sugar cookies on the chewy side (it also pairs better with the cream cheese frosting!) so I took mine out a few minutes early.
While the cookies are baking, you can whip up some super easy cream cheese frosting. I tried this recipe and love it. The more lemon, the better!
Once the cookies have cooled, all you need to do is spread the frosting on top and add the washed berries or other fruits of your choice on top.
Here's a tip for those banana-users: brush on some lemon juice (leftover from the frosting recipe!) on the slices of banana so your red/white/blue pizzas don't turn into red/brown/blue pizzas. Not as patriotic if that happens.
There you have it! I'm also a fan of cool desserts, so I just stuck these little guys in the fridge to cool until the fireworks began.
